Cilantro-Lime Rice Bowls with Chipotle Chicken & Fire-Roasted Corn

The split isn't always the protein. Everyone eats the same chipotle chicken and fire-roasted corn — the rice finish and sauce are what change. Adult: cilantro-lime rice + Tari Verde (450 cal / 43g protein). Kid: buttery rice + toum (Tushar's build; adjust for appetite).

Make this when

You want one shared cook to feed adults + kids without treating them as two separate dinners. The chicken and corn stay the same across all four plates; the rice finish and the sauce are what change. Adults get cilantro-lime Bone Broth Rice with Tari Verde; kids get buttery rice with toum. Tushar cooked the rice from a full Bone Broth Rice batch (8 servings) so this dinner uses 3 and leaves 5 in the fridge for later meals — the shortcut window shrinks to ~15 min when the rice is already prepped.

SHARED COOK

Adult — Cilantro-Lime Rice + Tari Verde

Kid — Buttery Rice + Toum (Tushar's Build)

Method

Split point

AFTER THE RICE IS COOKED AND THE CHICKEN AND CORN ARE HOT. Two rice servings get cilantro + lime + salt for the adult plates. The third serving splits between two kid trays with 1 tbsp butter divided across them.

2 adult plates (cilantro-lime rice + 6 oz chicken + 2 oz corn + 1 tbsp Tari Verde) / 2 kid trays (buttery rice + 3 oz chicken + 2 oz corn + 1/2 tbsp toum per tray in Tushar's build).

Shared base

Cook once — this part works for everyone.

  1. 1
    PREPARE THE BONE BROTH RICE

Cook a fresh batch (2 cups rice + 4 cups bone broth, 18-20 min covered on low + 10 min rest) OR reheat 3 stored servings until steaming hot.

  2. 2
    REHEAT THE CHICKEN

Air fryer 10 min at the package-recommended temperature. Confirm steaming hot throughout before serving.

  3. 3
    BOIL THE CORN

5 min in salted water. Drain, then season with fresh lime juice and salt to taste.

Adult — Cilantro-Lime Rice + Tari Verde

  1. 4
    TOSS ADULT RICE

Combine 2 rice servings with chopped cilantro, lime juice, and salt to taste. Toss while the rice is still warm — the aroma opens up faster.

  2. 5
    PLATE ADULT

Divide the cilantro-lime rice across two plates. Add 6 oz chicken and 2 oz corn to each. Drizzle 1 tbsp Tari Verde over the top of each plate — do not mix in.

Kid — Buttery Rice + Toum (Tushar's Build)

  1. 4
    SPLIT THE KID RICE

Divide 1 rice serving across two trays. Add 1/2 tbsp butter per tray while the rice is warm; toss until melted.

  2. 5
    PLATE THE KID TRAYS

Add 3 oz chicken and 2 oz corn to each tray. Drizzle 1/2 tbsp toum over the chicken in each tray. ADJUST PORTIONS FOR YOUR OWN KIDS' APPETITES.

What makes it different

  • 1 prepared serving Bone Broth Rice (split between two trays)
  • 1 tbsp butter (divided across both rice portions)
  • 6 oz reheated chipotle chicken (3 oz per tray)
  • 4 oz cooked fire-roasted corn (2 oz per tray)
  • 1 tbsp toum or preferred mayo-based sauce (1/2 tbsp per tray in Tushar's build)

Three keys to success

  1. 1SHARED PROTEIN + VEG. Chicken and corn are the same across all four plates — the split lives in the rice finish and sauce, not the protein.
  2. 2AIR-FRYER TIME 10 MIN. Temperature = physical package label. Tushar confirmed 10 min but not the temperature; the package is the source of truth.
  3. 3CORN: 5-MIN BOIL + LIME + SALT. Drain, season, done. Fire-roasted corn already has char — don't cook it twice.

Storage and nutrition

Storage: Cool rice, chicken, and corn promptly in shallow airtight containers and refrigerate within 2 hours. Store Tari Verde and toum separately — sauces on top only at serving time.

Reheat: Reheat rice + chicken + corn until steaming hot. Microwave with 1 tbsp water per rice serving under a damp paper towel to prevent drying. Re-drizzle fresh sauces after reheating.

Lasts: 3-4 days fridge per USDA leftovers guidance. Freeze rice + chicken portions separately for longer storage; add fresh sauces after reheating.
