First bite: caramelized Biscoff cookie butter from the blended-in spread and emulsion. Middle: creamy ultra-filtered-milk and whey body. Finish: a Lotus cookie crumbled on top for crunch — the version that keeps both cookies on top hits harder.

Method
- 1BLEND BASE
Combine the 2% ultra-filtered milk, whey isolate, vanilla, monk fruit, guar gum, salt, 1/2 tsp cookie butter emulsion, and 1 tsp Biscoff cookie butter. Blend until completely smooth with no whey clumps.
- 2POUR + FREEZE
Pour into a Creami pint without exceeding the max-fill line. Freeze upright and level overnight.
- 3FIRST SPIN
Process the frozen pint on Regular Ice Cream. If it stays powdery, run one no-liquid Respin before adding mix-ins.
- 4ADD MIX-INS
Cut a center well and add 1 tsp Biscoff cookie butter and one Lotus Biscoff cookie, then run Mix-In. Note that the mixed-in cookie loses most of its crunch.
- 5TOP + SERVE
Crumble the second Lotus Biscoff cookie over the top and eat immediately for the intended texture. For stronger crunch, keep both cookies on top instead of mixing one in.
Three keys to success
- 1The cookie butter emulsion and the first teaspoon of Biscoff spread go into the base before freezing — that is what carries the flavor through the whole pint.
- 2Freeze the pint upright and level overnight.
- 3Use Regular Ice Cream for the first cycle, not Lite.

Storage and nutrition
Storage: Keep the unprocessed base frozen upright and level. Process only when ready to eat.
Reheat: N/A. If the processed base is powdery, use a no-liquid Respin before adding the mix-ins.
Lasts: The frozen pre-spin pint keeps up to one week. The finished pint is best immediately after Mix-In and topping.
