Parmesan Corn Chex Snap Peas
Split Cook Method™Base

Parmesan Corn Chex Snap Peas

Two-crunch side. 2 tbsp aged Parm + 4 tbsp crushed Corn Chex = the side that disappears off any plate.

Make this when

You want a vegetable side that earns its own attention on the plate instead of being the leftover compartment. The crusted treatment turns snap peas into a craveable side — kids who reject 'plain peas' eat these because they read as 'crispy thing'.

Flavor target

Crispy golden edges on the snap peas + visible Parm + Chex crumb adhered to each pod. NOT mush, NOT bare. The chex gives bulk + crunch, the Parm gives salt + umami. Together the combo is dense enough to coat without weighing the peas down.

Ingredients

Method

  1. 1

PREHEAT OVEN 425°F. Line a sheet pan with parchment paper.

  2. 2
    PROCESS THE PARM

Cube ~2 oz of Kirkland Stravecchio. Pulse in a food processor until coarse grated (NOT fine — you want visible flecks). Set aside.

  3. 3
    PULSE THE CHEX

4 tbsp Corn Chex into the same processor. Pulse 4-5 times until coarse crumbs — about the texture of panko, NOT powder. Visible flake bits are the goal.

  4. 4
    TOSS IN A BOWL

Snap peas + olive oil spray (2-3 sec) + 2 tbsp processed Parm + 4 tbsp crushed Chex + pinch salt + pepper. Toss until each pea is coated. Toss in the bowl FIRST, then spread on the pan — even adherence beats sprinkling on the sheet.

  5. 5
    SPREAD ON PARCHMENT

Single layer. Crumbs that fall onto the parchment will crisp into clusters — bonus crunch.

  6. 6
    BAKE 18-22 MIN

425°F. Pull when the snap pea edges are deep golden + the crust is crispy. Some pods will char slightly — that's the texture target.

  7. 7
    SERVE IMMEDIATELY

Best straight from the oven. They soften on standing.

Adult

Full recipe as written. Optional finish: hit with cracked black pepper + a squeeze of lemon at the table.

Kid plate

Kid

Same recipe — kids eat the SAME crusted peas. The crust is a feature for kids (sweetness from peas + crunch). Some kids reject visible char on the pods; pull the ones that browned hardest for adults.

Storage and nutrition

Storage: Best fresh. Day-2 peas soften in the fridge; the crust mostly survives but the snap pea pop is gone.

Reheat: Air fryer 400°F for 4-5 min. Restores ~70% of the original crispness. Oven 400°F for 6-8 min also works.

Lasts: 1 day fresh. 2-3 days if reheated dry-heat. Don't microwave — kills the crunch.
