Split point

AT THE PAN. Two trays, two seasonings. Adult tray = Dan-O's Spicy. Kid tray = Dan-O's Original. Bake on the same rack, same time, same temp. Zero workflow split.

50% Adult Spicy / 50% Kid Original

Shared base

Cook once — this part works for everyone.

  1. 1
    PREHEAT

Oven to 425°F. Convection if you have it.

  2. 2
    PAT DRY

Paper towels, every thigh, both sides. Press hard. This is the most important step.

  3. 3
    OIL

Drizzle oil, rub it in. Tiny pinch of salt on each thigh.

  4. 4
    ASPARAGUS PREP

Snap off woody ends. Toss with olive oil, salt, pepper. Single layer on a sheet pan.

Adult — Dan-O's Spicy + Umami Lemon Heat Drizzle

  1. 5
    SEASON

Coat both sides of the adult thighs HEAVY with Dan-O's Spicy. You should barely see the chicken.

  2. 6
    BAKE

Skin-side up on the adult tray. 425°F, 35-40 min. Don't flip, don't open the oven before 30.

  3. 7
    ASPARAGUS

Roast the same time, same oven. 12-15 min until tender + slightly charred. Pull when thighs are at 30 min mark.

  4. 8
    MAKE THE SAUCE

3 minutes — mayo + lemon + soy + Dijon + chili oil. Whisk smooth, rest 5 min. (See Umami Lemon Heat Sauce in Cookbook.)

  5. 9
    PLATE

2 thighs over charred asparagus, drizzle Umami Lemon Heat over the asparagus. Crack of pepper. Done.

Kid — Dan-O's Original + Plain Asparagus + Wrap

  1. 5
    SEASON

Coat both sides of kid thighs with Dan-O's Original. Same heavy hand — Original isn't spicy, just savory.

  2. 6
    BAKE

Same rack as adult tray, 425°F, 35-40 min.

  3. 7
    WRAP

Warm tortilla in microwave 15 sec or on a dry pan. Cut in half, fold.

  4. 8
    PLATE

1 thigh + plain asparagus (no tapenade) + folded wrap. Mild, familiar, no resistance.

Filmed one-pan version: two family dinners

The new video shows a different cook from the original two-tray, 425°F recipe above. Both mild and spicy bone-in thighs shared one pan. Adults got Umami Lemon Heat on asparagus; the first-night kid plate had plain asparagus and a buttered bun. The second-night kid plate was not filmed.

What the filmed batch used

  • Bone-in, skin-on chicken thighs; filmed portions were not weighed
  • Dan-O's Original for the kid side and Dan-O's Spicy for the adult side
  • Asparagus for both plates; a buttered bun for the filmed first-night kid plate
  • Umami Lemon Heat adult finish: light mayonnaise, lemon, soy sauce, Dijon, and chili oil
  • Reserved pan juices for storing and reheating the chicken

How the filmed version came together

  1. 1Pat the thighs dry. Arrange in one pan, keeping the Original-seasoned kid pieces separate from the Spicy adult pieces.

  2. 2Roast uncovered. This filmed pan took about 90 minutes at 350°F; thigh size and oven conditions vary. Use a thermometer to verify 165°F in the thickest part, away from the bone.

  3. 3Cook asparagus. Whisk light mayonnaise, lemon, soy, Dijon, and chili oil for the adult Umami Lemon Heat finish. Keep the kid asparagus plain.

  5. 5For dinner two, reheat the refrigerated chicken with its juices. The filmed reheat took about 30 minutes at 350°F; use a thermometer to check the center reaches 165°F before serving.

Three keys to success

  1. 1PAT DRY hard. Paper towels, both sides, every thigh. Wet skin = rubber skin.
  2. 2Two trays. Don't try to do half-and-half in one pan — the seasonings will cross.
  3. 3Coat aggressively. You should not see chicken skin under the seasoning.

Storage and nutrition

Storage: Cooked thighs in an airtight container, fridge. Pour the rendered pan juices over the chicken before sealing — that's the secret weapon for next-day tacos.

Reheat: Air fryer 350°F for 4-5 min — re-crisps the skin. Don't microwave (turns skin rubbery).

Lasts: 3-4 days in fridge. Skin loses some crispness but flavor holds.
