S'mores Iced Proffee

Proffee Episode 5 — Ep 1's concentrate-first technique with a thin marshmallow-creme + graham rim, two toasted marshmallows, and a sugar-free chocolate drizzle. 150 cal / 22g protein per glass, 5-minute build.

Make this when

You want Ep 1's concentrate-first iced protein coffee turned into a s'mores drink — thin marshmallow-creme + graham rim, two toasted marshmallows, sugar-free chocolate drizzle. 150 cal / 22g protein per glass. Ep 5 of Proffee. Same 5-minute build, same technique spine.

Flavor target

First sip: crushed graham + marshmallow creme rim carries campfire flavor before the coffee lands. Middle sips: strong instant coffee concentrate + fat-free ultra-filtered milk pull the classic s'mores base into iced-coffee territory. Finish: two toasted marshmallows floated on top + sugar-free chocolate drizzle deliver the s'mores payoff. Not chalky, not clumpy — whey dissolves into the hot concentrate before ice + milk go in.

Method

  1. 1
    BUILD THE S'MORES RIM

Spread a VERY THIN smear of marshmallow creme around the rim of a tall serving glass. Crush half a graham cracker sheet on a plate and press the coated rim into the crumbs. Rim coat only — a heavy layer overwhelms the coffee and makes the glass messy.

  2. 2

BUILD THE CONCENTRATE (into the rimmed glass): 1 tbsp instant coffee + 1/2 serving unflavored whey isolate + 2 tsp monk fruit sweetener. Blend the whey into the concentrate FIRST — this is the Proffee-series spine that prevents clumps.

  3. 3
    ADD HOT WATER + FROTH

2 tbsp hot (not boiling) water. Submerge the frother head BEFORE turning it on for splatter control. Froth until the concentrate is completely smooth. Add the third tbsp only if it needs help moving.

  4. 4
    ADD ICE + MILK

Fill the glass with ice, then pour in 1/2 cup Fairlife fat-free ultra-filtered milk. Stir gently.

  5. 5
    TOAST THE MARSHMALLOWS SAFELY

Place the two Max Mallow marshmallows on a heat-safe skewer or utensil and torch them AWAY from the glass and any plastic. Skewer method is the safest and cleanest — never torch marshmallows already sitting in the drink. Set the toasted marshmallows over the glass.

  6. 6
    FINISH + SERVE

Drizzle 1/2 tbsp sugar-free chocolate syrup over the toasted marshmallows and serve immediately. Marshmallow rim softens against ambient humidity in ~5 minutes.

Adult plate

Adult

Full recipe as written — 1 glass per adult at 150 cal / 22g protein. Adult-only because of caffeine.

Kid plate

Kid

Adult-only Powerup — this contains caffeine and is NOT a kid drink. Younger kids shouldn't have caffeine at all; older kids should get caffeine-free protein alternatives.

Three keys to success

  1. 1Blend whey into the CONCENTRATE first, before ice or milk. Proffee-series spine — carries from Ep 1.
  2. 2Hot (NOT boiling) water for the concentrate. Boiling denatures the whey.
  3. 3Submerge the frother head BEFORE turning it on. Splatter control.

Storage and nutrition

Storage: Best served immediately. The blended concentrate (before ice + milk + rim + marshmallows + drizzle) can be refrigerated in a sealed jar for up to 24 hours — reblend briefly if it separates. Rim + toasted marshmallows + chocolate drizzle go on AT SERVING TIME only.

Reheat: Don't — this is an iced drink. For a hot version, skip the ice and use warm (not boiling) milk over the hot concentrate. Skip the rim and toasted marshmallows for a hot serve (the marshmallow-creme rim softens too fast against a hot glass).

Lasts: Finished drink is best in the first 2-3 minutes. Marshmallow-creme rim softens against ambient humidity in ~5 min; toasted marshmallows soften from drink humidity in ~1-2 min. Concentrate alone (no ice/milk/rim/marshmallows/drizzle) holds 24 hours refrigerated.

Brands I use

Max Mallow
Low-calorie marshmallows (2 pieces per glass)
The macro-friendly marshmallow pick. Any low-calorie or lower-sugar marshmallow works — Max Mallow is the creator's reference for the 150 cal target. Verify the label before publishing as label-verified. Not sponsored.
Marshmallow Creme
Marshmallow creme / fluff (very thin smear per glass)
The cleanest tack for the graham rim. A tiny amount catches the crumbs without pushing calories. Store brand or Kraft Jet-Puffed both work.
Graham Crackers
Half a Honey Maid graham sheet or equivalent (crushed for the rim)
The traditional s'mores identity. Any graham cracker works — Honey Maid Low-Sugar drops a few calories. Half a sheet is enough for one glass rim.
Sugar-Free Chocolate Syrup
Torani Sugar-Free Chocolate OR Skinny Syrups Sugar-Free Chocolate (1/2 tbsp per glass)
The s'mores drizzle. Any thin sugar-free chocolate syrup works — Torani is thicker and holds on the marshmallows better. Not sponsored.
Fairlife
Fairlife
Fat-Free Ultra-Filtered Milk (1/2 cup per glass)
Series-standard high-protein milk in the fat-free grade — same as Ep 1-4. 8g protein per 1/2 cup vs 4g in regular skim milk. Not sponsored.
Unflavored Whey Isolate
Any clean-tasting unflavored whey isolate — ~28g protein per serving
Protein spine. Isolate (not concentrate) blends smoother. 1/2 serving per glass = ~14g whey protein + ~8g from the fat-free ultra-filtered milk = ~22g total.
Any Instant Coffee
Nescafé, Folgers, Trader Joe's Instant, etc. (1 tbsp per glass for strong; 1/2 tbsp for milder)
Caffeine spine. Any instant coffee blends into the concentrate without a coffeemaker step. Caffeine content varies by brand — check the package if intake matters.
