Split Plate Tropical Chicken Snack Box

Snack Box Series Ep. 7 — the first hot-protein box in the series. Fully cooked fajita chicken + fresh mango + cubed Colby Jack + lightly salted cashews. About 250 cal / 21g protein per box. Make four at once for post-lunch or after-school hunger.

Make this when

You want a no-cook 4-box batch that lasts 2 kids × 2 days AND you want a cooked-protein anchor (not the shelf-stable jerky / pepperoni / beef-stick move from Ep. 1-6). Fajita chicken + mango is the tropical hook; Colby Jack + cashews carry the familiar-kid-flavor + crunch. Ep. 7 of the Split Plate Snack Box series — the first hot-protein episode.

Flavor target

First compartment: 2 oz fully cooked fajita chicken, chopped for the child's chewing ability. Second: 3/8 mango cut age-appropriately — sweet-fresh anchor + the tropical hook. Third: 1 Colby Jack cheese stick, cubed — creamy calcium, kid-familiar. Fourth: 14g lightly salted cashews (~1/2 label serving) — buttery crunch + healthy fat, gated on developmental readiness. Reads tropical-plate energy scaled for kids.

PER BOX (yields 1 snack box)

FOUR-BOX BATCH (recommended)

Method

  1. 1
    SET UP

Set out four divided snack boxes (4-compartment Bento-style — same format as Snack Box Series Ep. 1-6). Fully cooked chicken means no stovetop or oven; the physical chicken package is source of truth if reheating before packing.

  2. 2
    CHICKEN

Divide 2 oz fully cooked fajita chicken into one compartment of each box, chopped for the child's chewing ability. Any brand of fully-cooked seasoned chicken works (Soules Kitchen shown). If reheating, heat to 165°F and cool promptly before packing.

  3. 3
    MANGO

Peel and cut 1.5 mangoes total across the 4 boxes (3/8 mango each), age-appropriate pieces. The sweet-fresh anchor + the tropical hook. Any ripe mango variety (Ataulfo / Kent / Tommy Atkins) flexes.

  4. 4
    COLBY JACK

Cube one Colby Jack cheese stick per box and add to the third compartment. Cube size = 1/2-inch or smaller for young kids. Colby Jack is milder than sharp cheddar — kid-friendly by default.

  5. 5
    CASHEWS

Add 14g lightly salted cashews (~1/2 label serving) to the final compartment. FOR KIDS UNDER 4 — omit whole cashews entirely; sub a soft alternative (soft berries, banana slices, or diced apple). Over 4 with good chewing = whole cashews only if supervised. The filmed brand contains cashews + peanut oil and may contain peanuts and other tree nuts.

  6. 6
    LID + CHILL

Snap lids on and refrigerate immediately — cooked chicken + fresh mango + cheese all need cold storage. Assembled boxes best within 2 days. For lunchboxes, pack with an ice pack. Add cashews closer to serving if maximum crunch matters (they soften in a sealed compartment after 24 hr).

Adult plate

Adult

Adult-friendly batch too — steal a box from the meal-prep stack. ~250 cal / 21g protein reads as a clean parent snack with real protein (thanks to the 2 oz cooked chicken vs the ~7g single-serving-protein anchors in Ep. 1-6). Whole cashews are fine for adults; the kid safety rules below don't apply.

Kid plate

Kid

SAFETY: Whole cashews are choking-hazard textures for young kids. Under 4 = omit whole cashews entirely (use a soft alternative — soft berries, banana slices, or diced apple), and cut chicken + mango + cheese into pieces appropriate for the child's chewing ability. Over 4 with confident chewing + supervision = the photographed textures are fine. Per CDC + AAP choking-prevention guidance. Do NOT label this box school-safe — cashews are a tree nut and school allergen rules vary. Kids can help place components — turns snack prep into low-pressure participation.

Three keys to success

  1. 1The photographed chicken is FULLY COOKED. If reheating before packing, heat to 165°F and cool promptly. Never pack warm chicken into a sealed cold-storage box.
  2. 2Chop chicken to the child's chewing ability. 2 oz per box = the macro anchor — bigger pieces are fine for older kids, smaller dice for young kids.
  3. 3Cut mango age-appropriately. Slippery mango cubes are less of a choking risk than firm spheres, but small kids still need supervised bite-sized pieces.

Storage and nutrition

Storage: Assemble the 4 boxes in one 10-minute pass. Refrigerate immediately — cooked chicken + mango + cheese all need cold storage. Best within 2 days.

Reheat: Don't reheat the assembled box (mango wilts, cheese sweats). If reheating the chicken portion, remove it, heat to 165°F, cool, and re-pack. Serve chilled by default.

Lasts: 2 days max in the fridge. Cashews soften and chicken may dry out after that even when kept cold.

Brands I use

Fully cooked fajita chicken (any brand)
2 oz per box (8 oz total for 4 boxes), chopped if needed.
The protein anchor and the reason this is the first HOT-protein snack box in the series. Photographed brand = Soules Kitchen Fajita Chicken; sub any fully-cooked seasoned chicken (rotisserie, precooked strips, leftover sheet-pan chicken). The physical package is source of truth for reheating and storage. Verify the label for gluten, soy, and any other dietary claims before publishing.
Mango (any ripe variety)
3/8 mango per box (1.5 mangoes total), peeled and cut age-appropriately.
The sweet-fresh anchor + the tropical hook. Ataulfo / Kent / Tommy Atkins all work — Ataulfo is the sweetest and easiest to peel; Kent/Tommy Atkins are more firm and hold in the box longer. Just-ripe (not overripe) reduces juice leakage between compartments.
Colby Jack cheese sticks (any brand)
1 stick per box, cubed. Sargento, Frigo, Kirkland all flex.
Creamy calcium + mild kid-friendly flavor. Milder than sharp cheddar, which makes it a better default for kids. Cube uniformly (1/2-inch or smaller for young kids). Any brand works; the label carries the exact calorie/protein count that anchors the macro estimate.
Lightly salted cashews (any brand)
14g per box (~1/2 label serving). Planters Lightly Salted Cashew Halves & Pieces shown.
Buttery crunch + healthy fat + the fourth-compartment texture pop. Shell-off is easier for kids to handle; measure by the label serving, not by handful. The filmed brand contains cashews + peanut oil and may contain peanuts and other tree nuts — the recipe is honest about that. Whole cashews = choking hazard for kids under 4; use the soft-alternative swap.
