Spicy Fajita Chicken Gnocchi
This replaces ordering takeout on weeknights. Crispy gnocchi, creamy spicy sauce, and a kid plate that's ready in the same 30 minutes — no separate meal, no compromise.
You want a high-protein dinner that doesn't turn into two separate meals for adults and kids — and you still want real texture (crispy, not mushy).

Method
STOP. Chicken is crisped. Divide gnocchi, chicken, and veg into 2 pans NOW — everything after this point is different for adults and kids.

Shared base
Cook once — this part works for everyone.
- 1CRISP THE GNOCCHI
Medium-high heat, 2 tsp oil. Add gnocchi in a single layer. Cook 8-10 min, flipping occasionally. Goal: crispy outside, not soft. Set aside.
- 2COOK VEG
Same pan, high heat. Add peppers + onions. Cook 4-5 min until lightly charred. Set aside.
- 3CRISP CHICKEN
Add shredded chicken to pan. Let it sit — develop slight browning. Don't stir constantly.
Adult — Spicy Fajita
- 4BUILD FLAVOR SAUCE
Blend cottage cheese + milk until smooth. Add to adult pan. Mix in Dan-O's, garlic powder, onion powder, smoked paprika, chili oil. Simmer 2-3 min. Should look like a light creamy sauce, not thick paste.
- 5COMBINE
Add gnocchi + veggies to adult pan. Toss lightly — should coat, not drown.
- 6FINISH
Lime squeeze + optional green onions. This completes the dish — don't skip.
Kid Path — Simple + Fast
- 4MILD SAUCE
Add a small amount of the blended cottage cheese + milk to kid pan (NO spices, NO chili oil). Stir with chicken.
- 5COMBINE
Add gnocchi. Add shredded cheese on top. Toss gently — keep it creamy and familiar.

What makes it different
- 1-1.5 tsp Dan-O's (Outlaw preferred)
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp chili oil
- Optional: chili flakes
- Juice of 1 lime

Kid Path — Simple + Fast
What makes it different
- Small amount of blended sauce base (no chili oil, no spice)
- Shredded mild cheese (mozz or cheddar)
Swap shredded chicken for Kirkland chicken bites or mild meatballs if preferred.
Three keys to success
- 1Don't sauce everything before splitting — sauce goes in AFTER the split point.
- 2Don't overcook after sauce — breaks texture. Simmer 2-3 min max.
- 3Don't force veggies into kid portion — serve on side, they eat more when they choose.

Storage and nutrition
Storage: Store gnocchi + sauce together (the crisp won't survive anyway). Keep chicken separate if possible.
Reheat: Microwave 90 sec or pan reheat with a splash of milk to loosen the sauce. The gnocchi won't re-crisp — that's the tradeoff. Fresh is best for this one.
Lasts: 2-3 days in fridge. Best eaten same day for texture.
