Make this when

You want a hot-fudge finish without the sugar hit or the 20-minute reduction. Two ingredients, one whisk, sub-15 calories per single-pint batch. Introduced as the topping on the Peanut Butter Bar Cookie Creami (W6F3 / Ep. 18) — cross-link back for the full parent recipe. Allergens and safety
  • Packaged labels vary — verify current sugar free syrup + cocoa labels before publishing final allergen or diet tags.
  • Not vegan verified — some cocoa brands process on shared equipment with dairy. Check the current label.

Packaged ingredients change formulas — check the label on what's actually in your kitchen.

Flavor target

Warm chocolate-syrup consistency at whisk time; thickens to fudge-shell texture as it cools onto a cold dessert. Silky and glossy — SIFT the cocoa or it's gritty. Background maple note from the sugar-free syrup, not maple-forward. Dutch cocoa specifically for the deeper alkalized chocolate read.

Ingredients

Method

  1. 1
    MEASURE SYRUP

1 tbsp sugar-free maple syrup into a microwave-safe ramekin. Maple Grove Farms was filmed; any sugar-free syrup works.

  2. 2
    WARM SYRUP

Microwave 10-15 seconds. Don't overheat — overheated syrup sets too thick as it cools.

  3. 3
    SIFT COCOA

Sift 1 tbsp Dutch cocoa into the warm syrup. Sifting is NOT optional — unsifted = gritty, sifted = silky.

  4. 4
    WHISK

Whisk until no dry cocoa remains and the sauce reads silky and glossy. Aim for warm chocolate-syrup consistency.

  5. 5
    DRIZZLE + SERVE

Drizzle immediately over the target dessert. Thickens as it cools — becomes a fudge shell over cold scoops.

Three keys to success

  1. 1Warm the syrup 10-15 seconds only. Overheated syrup sets too thick as it cools.
  2. 2SIFT the cocoa. Sifting prevents dry pockets and gives the fudge a silky finish. Unsifted cocoa = gritty texture — the recipe fails.
  3. 3Whisk until glossy — no visible dry pockets. If the sauce reads matte or thin, whisk another 10 seconds.

Storage and nutrition

Storage: Make fresh — the fudge thickens as it cools and doesn't hold well overnight.

Reheat: 5-10 seconds microwave if made ahead. Whisk again after re-warming to restore gloss.

Lasts: Best within 5 minutes of whisking. Re-warmable 5-10 seconds if made slightly ahead.

Brands I use

Maple Grove Farms
Sugar-Free Maple Syrup
Base of the two-ingredient fudge. Sub freely — the structure is syrup + cocoa, not brand-specific.
Dutch Cocoa (any brand)
Dutch-Process Cocoa Powder
Dutch-processed cocoa is alkalized — smoother, less acidic, deeper chocolate.
