Split Plate Chili Hot Dogs

One chili base. Six beef dogs. Two adult plates + two kid plates. Split at the bun (keto vs regular) + toppings (red onion + banana peppers vs optional mustard) + presentation (composed vs deconstructed). 510 cal / 58g protein adult. 45 min end-to-end.

Make this when

You want chili dog night without cooking two separate dinners. One 12-serving chili base = 4 plates tonight + 6 servings reserved for chili mac or another comfort build later in the week. Adults get loaded on keto buns; kids build their own on a divided tray. No-bean chili — thick enough to stay on the bun.

Split point

AT THE PLATE — same chili base, same beef dogs, same Velveeta. Adult vs kid forks on bun (Nature's Own keto vs Ball Park regular) + toppings (red onion + banana peppers vs optional mustard) + presentation (composed vs deconstructed).

2 adult plates (1.5 loaded chili dogs on keto buns each) / 2 kid plates (1 deconstructed chili dog + 0.5 dog on the side, on a divided tray each).

Shared base

Cook once — this part works for everyone.

  1. 1
    CHILI BASE

Make the Hot Dog Chili Base (or reheat 6 stored servings). Brown 2 lb 93/7 ground beef, season with 3 tbsp Spiceology BBQ rub (or the alternative blend), stir in Dijon + Worcestershire, add tomato paste + bone broth, reduce uncovered until the visible liquid is gone. Divide into 12 servings; use 6 tonight.

  2. 2
    SCORE THE DOGS

Shallow diagonal cuts on 6 beef dogs — 3-4 marks per dog, no more than 1/4 through. Char surface without splitting.

  3. 3
    AIR FRY

400°F for ~7 min. Check early — air fryers vary. Pull when the scores have opened and the edges are lightly charred.

  4. 4
    WARM BOTH BUN STACKS

3 Nature's Own keto (adult) + 2 Ball Park regular (kid). 30 sec at 300°F in the air fryer after the dogs come out. Cold buns crack; warm buns cradle the dog.

  5. 5
    1/2 VELVEETA SLICE PER BUN

6 buns × 1/2 slice = 3 slices total. Fold the slice INTO the bun before the dog — the hot chili melts it in seconds.

Adult — 1.5 Loaded Chili Dogs on Keto Buns + Red Onion + Banana Peppers

  1. 6
    ADULT TOPPINGS PREP

Finely chop red onion. Slice banana peppers (or use pre-jarred). Both stay raw — no cook time.

  2. 7
    ASSEMBLE

3 Nature's Own keto buns → 1/2 Velveeta slice each → hot dog → 1 serving chili spooned over each dog.

  3. 8
    FINISH

Scatter red onion + banana peppers over the adult chili dogs. Plate 1.5 dogs per adult (~510 cal / 58g protein).

Kid — Deconstructed Chili Dog Tray

  1. 6
    KID TRAY

Divided tray. 1 Ball Park regular bun (opened flat, 1/2 Velveeta slice folded inside) in one compartment.

  2. 7
    CHILI WELL

1 serving hot chili into a small well or ramekin on the tray. Kids can dip or spoon.

  3. 8
    DOGS

1 whole beef dog in the bun compartment (for building). 0.5 beef dog sliced into rounds on the side (for snacking).

  4. 9
    OPTIONAL MUSTARD

Only if they ask. Small squeeze on the tray or on the bun.

What makes it different

  • 3 Nature's Own Keto Hot Dog Buns (1.5 per adult plate)
  • Finely chopped red onion, to taste
  • Sliced banana peppers, to taste

What makes it different

  • 2 Ball Park regular hot dog buns (1 per kid)
  • Yellow mustard, to taste (optional — only if they ask)

Three keys to success

  1. 1REDUCE THE CHILI UNTIL VISIBLE LIQUID IS GONE. This is the entire cling step. A wet chili soaks the bun and slides off the dog. Uncover, medium heat, stir occasionally, taste for salt only AFTER reducing.
  2. 2SCORE, DON'T SLICE. Shallow diagonal cuts along each dog — 3-4 marks per dog, no more than 1/4 through. The cuts open in the air fryer and create char surface without splitting the dog in half.
  3. 3TWO BUN STACKS, WARM SEPARATELY. Nature's Own keto for adults + Ball Park regular for kids. Both warm briefly (30 sec at 300°F in the air fryer after the dogs come out) — cold buns kill the plate.

Storage and nutrition

Storage: Cool cooked chili promptly and refrigerate in shallow airtight containers within 2 hours. Cooked hot dogs 3-4 days fridge. Assemble plates fresh — chili + buns don't hold well pre-assembled.

Reheat: Chili: covered saucepan on medium 3-5 min, stir occasionally. Reheat to 165°F. Hot dogs: air fryer 3 min at 350°F to re-char. Buns fresh — never reheat a chili dog assembled.

Lasts: Chili base: 3-4 days fridge, 3-4 months freezer for best quality (per USDA leftovers guidance). Assembled chili dogs are a same-night dinner.

Meal chainReinvent as Chili Mac and Cheese— The 12-serving chili base uses 6 tonight — reserve the other 6 for the Chili Mac and Cheese meal-prep batch. 8 containers, ~380 cal / 39g protein per adult serving, second family dinner without another cook.→
