Method
SPLIT HAPPENS AFTER AIR FRYING, BEFORE ANY SEASONING OR SAUCE. Reserve 7 oz plain chicken for the kids the moment it comes out of the air fryer.
2 adults + 2 kids
Shared base
Cook once — this part works for everyone.
- 1AIR FRY
All 21 oz chicken at 400°F for 10-12 min (or follow the package). Shake halfway. Goal: crispy and hot through.
- 2RESERVE KID CHICKEN
Set aside 7 oz plain chunks (about 3.5 oz per child) BEFORE any seasoning, veg, or sauce. Everything after this point is adult-only.
Adult — Glossy Chili Chicken (7 oz per plate)
- 3CHAR VEG
Wok on high, light avocado spray. Cook peppers + onions 3-5 min until charred but still crisp.
- 4SEASON VEG
Add 1/2 tbsp Umami Punch to the charred veg. Toss briefly.
- 5ADD ADULT CHICKEN
Add the remaining 14 oz air-fried chicken to the wok. Sprinkle with the remaining 1/2 tbsp Umami Punch.
- 6POUR SAUCE
Pour the prepared six-ingredient sauce over the chicken + veg. No slurry.
- 7TOSS UNTIL GLOSSY
Aggressive toss for 45-75 sec, just until everything is coated and shiny. Kill the heat the second it clings — do NOT simmer.
- 8PLATE ADULTS
7 oz glossy chili chicken with veg per adult. Serve immediately.
Kid — Plain Chicken + Cucumber + Garlic Bread + Mustard

What makes it different
- 7 oz reserved plain chicken (creator served 3.5 oz per child; adjust to appetite)
- Cucumber (sliced into age-appropriate pieces)
- 2 portions garlic bread (one per child, or adjust)
- Yellow mustard for dipping
Portions are what worked for the creator's girls (~3.5 oz chicken per child). Adjust cucumber, bread, and chicken to appetite.
Three keys to success
- 1Reserve 7 oz kid chicken BEFORE any seasoning, veg, or sauce touches the wok.
- 2High heat the entire adult cook. Low heat = pooled sauce and soft breading.
- 3Split the 1 tbsp umami seasoning: half on the veg, half on the adult chicken.

Storage and nutrition
Storage: Store plain kid chicken and glazed adult chicken in separate containers. Best inside 2 days — the glaze softens the breading over time.
Reheat: Air fryer 375°F for 3-4 min. Avoid microwaving; kills the crisp texture.
Lasts: 1-2 days. Not a meal-prep recipe — it's a same-night winner.
