High-Protein Smash Burgers + Fries
One griddle. Two beef grades. Adult plate = 490 cal / 51g protein with keto bun + double smash. Kid plate = same smash technique on a slider roll. The In-N-Out-style sauce is the adult flavor lever — with a 1 tsp harissa cheat that turns it into something you actually want to eat.
Burger craving hits and you want it macro-honest for the adults without cooking two dinners. One griddle, two protein grades — adults get 93/7 doubles on keto buns with an In-N-Out-style spread that packs a harissa kick; kids get 80/20 sliders on brioche with a bottled sauce and ketchup fries. 30 min end-to-end.

Method
AT THE GRIDDLE — beef grade (93/7 adult vs 80/20 kid), patty count (2 vs 1), bun (keto vs brioche slider), sauce (harissa spread adult vs bottled kid), fry portion (full vs half). Same griddle timing, same salt-before-smash, same Velveeta melt. Everything else forks at the plate.
2 adult plates (Bettergoods keto bun + 2 x 3 oz 93/7 patties + 2 Velveeta slices + In-N-Out-style spread with harissa + 1 serving Rally's fries + extra sauce for dipping) / 2 kid plates (Marketside brioche slider + 1 x 3 oz 80/20 patty + 1 Velveeta slice + bottled secret sauce + 1/2 serving Rally's fries + ketchup).
Shared base
Cook once — this part works for everyone.
- 1SAUCE FIRST
In a small bowl mix 1 tbsp mustard + 1 tbsp light mayo + 1 tbsp ketchup + 1 tbsp pickle juice + 1 tsp harissa + chopped pickles to taste. Set aside. Makes ~4 tbsp = 2 tbsp per adult plate (1 tbsp on burger, 1 tbsp for fry dip).
- 2FRIES
Rally's Famous Fries into the air fryer at 400°F for 15 min. Start these BEFORE the burgers — they finish within 2 min of the burgers.
- 3PORTION
12 oz 93/7 beef into 4 x 3 oz balls for adults. 6 oz 80/20 beef into 2 x 3 oz balls for kids. Loose balls — don't compress.
- 4GRIDDLE HOT
Cast iron or flat-top on medium-high 4-5 min. Test: water droplet skitters + evaporates in 2 sec.
- 5SALT + SMASH
Beef balls onto the hot griddle — adult 93/7 on one side, kid 80/20 on the other. Pinch of salt on each within 5 seconds. Smash flat with a spatula + parchment to ~1/4-inch thick. Lacy edges = flavor.
- 6MUSTARD FLIP
2-3 min undisturbed for the crust. Small blob of mustard on the raw top of each patty. Flip. 90 sec on the second side.
- 7CHEESE
Velveeta slice on each patty immediately after the flip. Cover with a metal bowl or the pan lid for 30 sec to trap steam + melt fast.
- 8TOAST BUNS
Keto buns + brioche sliders cut-side down on the griddle in the beef fat, 30-45 sec until golden.
Adult — Keto Bun Double + Spread-with-Harissa
- 9ADULT BUILD
Toasted keto bun bottom + 1 tbsp spread + 2 stacked 93/7 patties (each with Velveeta) + optional pickle chips + toasted keto bun top. Plate with 1 serving Rally's fries + 1 tbsp extra spread on the side for fry dipping.
- 10EAT IMMEDIATELY
Smash burgers lose their crust fast when they sit. Bite through the sauce → cheese → double patty → keto bun in one motion.
Kid — Brioche Slider + Bottled Sauce (NO Harissa)
- 9KID BUILD
Toasted brioche slider bottom + squeeze of bottled sauce + 1 x 3 oz 80/20 patty with Velveeta + toasted brioche top. Plate with 1/2 serving Rally's fries + a small puddle of ketchup for dipping.
- 10SERVE
Kids often eat the burger first + graze the fries. Bottled sauce is the 'safe' option — if kid asks about the adult spread, offer the bottled one as an alternative.

- 2 Bettergoods Keto Friendly Hamburger Buns
- In-N-Out-style spread (~4 tbsp total, 2 tbsp per adult plate)
- · 1 tbsp yellow mustard

Kid — Brioche Slider + Bottled Sauce (NO Harissa)
What makes it different
- 6 oz 80/20 ground beef (2 x 3 oz patties, 1 patty per kid plate)
- 2 Marketside Brioche Slider Rolls
- Bottled secret/special sauce (Heinz, TJ's, or similar) — for the burger
- Ketchup — for the fries
Three keys to success
- 1GRIDDLE HOT. Cast iron / flat-top / large skillet on medium-high 4-5 min until a water droplet skitters + evaporates in 2 sec.
- 2MAKE THE SAUCE FIRST. All spread ingredients + chopped pickles into a bowl before you touch the beef. The sauce is ready to spread the moment the burger comes off the griddle.
- 3FRIES BEFORE BURGERS. Air fryer 400°F × 15 min. Start them BEFORE the griddle. Fries and burgers finish within 2 min of each other.

Storage and nutrition
Storage: Best fresh — smash burgers lose their crust fast in the fridge. Sauce holds separately (see below).
Reheat: Don't reheat baked burgers — the crust turns to leather. Cook patties fresh. Spread lives 5 days in the fridge; sauce quality is best within 3.
Lasts: In-N-Out-style spread: 5 days fridge in a sealed jar (pickle juice + acid is the preservative). Raw ground beef: use within 24 hr of purchase, or freeze at portion size. Velveeta: per box date, sealed. Buns: keto bun 3-5 days at room temp, brioche 3 days.
