High-Protein Taco Bowls

Quest Loaded Taco chips as the bowl base = chips that contribute 19g protein instead of zero. Plus 93/7 lean beef + Kraft fat-free cheddar + a 1 tbsp bone-broth moisture hack per meal-prep container ≈ 61g protein per adult at 500 cal (estimated). The kid plate strips out the macro tricks (Velveeta, regular chips, full mini guac) — same flavor, no friction.

Make this when

Taco night, but built for serious protein AND meal-prep. Cook 2 lb of 93/7 beef once, portion into 6 meal-prep containers with cheese + 1 tbsp bone broth per container. Estimated adult bowl: ~61g protein / 500 cal / 7g net carbs. Kid plate: deconstructed with Velveeta + regular chips + full mini guac cup.

Split point

AT THE PAN — CHEESE SPLIT BY ZONE. Same Spiceology-seasoned beef + same Kirkland bone broth braise for everyone. The split is: (1) the cheese — Kraft fat-free for adult zone, Tillamook Medium for kid zone; (2) the chip — Quest Loaded Taco for adults (bowl base), Simply Tostitos Organic for kids (compartment); (3) the format — adult bowl (assembled), kid compartment tray (build-your-own at the table).

2 adult bowls (6 oz beef + 1 bag Quest chips + 1 oz Kraft fat-free cheddar + 1 Wholly mini + iceberg/Roma) / 2 kid trays (3 oz beef + ~1 oz Simply Tostitos chips + 0.5 oz Tillamook Medium cheddar + 1 Wholly mini + iceberg/Roma in a side bowl). 1.25 lb of 93/7 lean ground beef = 4 total servings.

Shared base

Cook once — this part works for everyone.

  1. 1
    MISE

Spiceology Taco Seasoning out, 1.25 lb 93/7 beef in a stainless mixing bowl, Quest Loaded Taco chips bags out (2), Simply Tostitos Organic for kids, Kraft fat-free cheddar + Tillamook Medium cheddar shredded, 4 Wholly Guacamole minis, iceberg + Roma tomatoes ready, Kirkland Sipping Bone Broth pouch open.

  2. 2
    SEASON BEEF

1.25 lb beef into the stainless mixing bowl. Add 2 tbsp Spiceology Taco Seasoning Blend + pinch of kosher salt. Mix with hands or a spatula until the seasoning is evenly distributed (1-2 min).

  3. 3
    DICE + SHRED

2 Roma tomatoes diced ~1/4-inch. 1 head iceberg shredded thin (~3 cups). Combine in a small bowl with a pinch of salt. Set aside.

  4. 4
    BROWN BEEF

Stainless skillet over medium-high. Cooking spray. Seasoned beef in. Break up as it browns, 6-8 min until just cooked through. 93/7 is lean enough that you don't need to drain.

  5. 5
    BONE BROTH BRAISE

Pour 1/3 cup Kirkland Sipping Bone Broth into the beef. Reduce 60 sec on medium-high — the broth carries the seasoning back into the meat. THIS STEP IS NON-NEGOTIABLE for the cheese melt + flavor distribution.

  6. 6
    CHEESE SPLIT BY ZONE

Push beef into two zones. ~70% adult-side: sprinkle 2 oz Kraft Fat-Free Shredded Cheddar. ~30% kid-side: sprinkle 1 oz Tillamook Medium Cheddar. Cover 60 sec. Cheese melts under the lid.

Adult — Quest Chips Bowl + Fat-Free Cheddar Beef + Wholly + Iceberg/Roma

  1. 7
    ADULT BOWL

Empty 1 bag Quest Loaded Taco chips into the bottom of a wide white bowl. Light crush with the back of a spoon (keep half-chips for texture). Spoon ~6 oz of the cheesy fat-free-cheddar beef from the adult zone over the chips.

  2. 8
    TOP THE ADULT BOWL

Scatter ~1 cup shredded iceberg + diced Roma tomato over the beef. Squeeze 1 Wholly Guacamole Classic Mini in the center as a dollop. Optional: hot sauce on the side (Lucky Dog, Cholula). Eat with a spoon, scoop through all layers.

Kid — Compartment Tray (Build-Your-Own, Tostitos + Medium Cheddar)

  1. 7
    KID TRAY

Compartment tray. Large compartment: ~1 oz Simply Tostitos Organic Yellow Corn chips (about 10-12 chips). Small compartment 1: 3 oz of the medium-cheddar kid-zone beef. Small compartment 2: 1 Wholly Guacamole Classic Mini squeezed in. Side bowl: small portion of lettuce + Roma tomato mix.

  2. 8
    ASSEMBLY (kid leads)

Chip + dab of beef + scoop of guac = bite. Some kids dip the chip into the guac directly + chase with a beef bite. Either pattern works. Don't pre-assemble nachos for them — the chips go soggy in 30 sec.

What makes it different

  • Simply Tostitos Organic Yellow Corn Tortilla Chips (~1 oz per kid)

  • 1 compartment kid tray per child (4-section tray, like EZPZ Happy Mat)
  • Small side bowl for lettuce + tomato

Three keys to success

  1. 1TWO PHASES: SEASON + BROWN → BRAISE + MELT. Phase 1 = brown the seasoned beef until just cooked through (6-8 min). Phase 2 = pour 1/3 cup Kirkland Sipping Bone Broth into the pan, reduce 60 sec, then add cheese to melt. Phase 2 is the texture unlock — never skip the broth step.
  2. 293/7 BEEF — NO FAT DRAIN. The leanness profile barely produces visible rendered fat. Skip the drain step entirely. If you used 80/20 or 85/15, drain it; but the recipe is built on 93/7 and the drain isn't needed.
  3. 32 TBSP SPICEOLOGY PER 1.25 LB BEEF. Measured, not eyeballed. The salt-forward blend gets bitter past 2.5 tbsp.

Storage and nutrition

Storage: MEAL-PREP FIRST DESIGN. Cook 2 lb beef once, divide evenly into 6 airtight meal-prep containers. Splash 1 tbsp Kirkland Sipping Bone Broth over each container (moisture hack). Add cheese to each container — 1 oz Kraft Fat-Free Cheddar to adult containers, 1.5 Velveeta slices to shared kid containers. Refrigerate up to 4 days. Store chopped romaine + halved yellow cherry tomatoes SEPARATELY (3-4 days). Keep chips in sealed bags at room temperature and assemble only when eating.

Reheat: Beef container: microwave ~90 sec covered, until hot. The 1 tbsp bone broth splash keeps the beef moist through the reheat and helps the fat-free cheddar melt cleanly (or the Velveeta on the kid side). Chips: serve room temperature — DON'T microwave. Produce: never reheat (wilts). Don't pre-assemble + store — the chips go soggy in 30 minutes flat.

Lasts: Cooked beef holds up to 4 days in the fridge, freezes 2 months. Quest chips: sealed bag at room temp 3-4 weeks. Simply Tostitos: sealed bag 4-6 weeks. Chopped romaine + yellow cherry tomatoes: 2-3 days max. Wholly minis: per package date. The refresh is meal-prep-first — cook once, portion into 6 containers, assemble each meal fresh.

Brands I use

93/7 Lean Ground Beef
93/7 Lean Ground Beef
2 lb pack — batches into 6 adult-equivalent servings (~5 1/3 oz raw-equivalent per adult, ~227 cal / 31g protein per portion)
The macro architecture is built on the leanness — 93/7 lets the bowl carry full-fat-equivalent cheddar and guacamole without exceeding the 500-cal budget. 80/20 adds ~100 cal per plate and breaks the high-protein/low-fat lane. The drain step isn't needed.
Dan-O's
Dan-O's
TAC-O Seasoning (salt-forward taco blend — filmed in the refresh)
Filmed in the 2026-08-28 refresh as the taco flavor anchor. Salt-forward taco blend with cumin + smoked paprika + chili. Sub Spiceology Taco Seasoning or homemade — same effect.
Quest Nutrition
Quest Nutrition
Loaded Taco Tortilla-Style Protein Chips (1.1 oz bag — 140 cal / 19g protein / 4g net carbs)
The macro lever — chips that contribute 19g protein instead of zero. Turns the carb slot into a second protein slot. Baked, not fried. The whole recipe is built around this SKU on the adult side.
Kraft
Kraft
Fat-Free Shredded Cheddar Cheese (1 oz per adult meal-prep container — 45 cal / 9g protein / 0g fat per oz)
The adult-side macro saver. Same melt + similar flavor as full-fat sharp cheddar, but 65 cal lower + 9g fat lower per oz. Portioned directly into each adult container so it melts through under the microwave reheat.
Velveeta
Velveeta
Slices (1.5 slices per shared kid container — split between two kids, ~50 cal / 3g protein per 3/4 slice)
Refresh swap for kid cheese — melts creamier than shredded cheddar under the microwave reheat and reads familiar for kids. Filmed spec: 1.5 slices per shared kid container, later split between two children.
Simply Tostitos
Simply Tostitos
Regular yellow corn tortilla chips (~1 oz per kid — ~150 cal / 2g protein / 18g net carbs per oz)
Kid-side chip. Restaurant-style thin yellow corn — familiar texture kids expect. Half the cost of Quest chips ($3 bag vs $0.75/oz) — wasted spend if you give Quest to a kid.
Wholly Guacamole
Wholly Guacamole
Classic Minis (6-cup pack, 2 oz / cup — 100 cal / 1g protein / 8g fat per mini)
Pre-portioned guac = portion-creep killer. Refresh spec: 1/2 mini per adult (60 cal, in the 500-cal budget), 1 full mini per kid. Same SKU as id 42 carnitas — already-in-your-fridge cross-recipe ingredient.
Siete
Siete
Habanero Botana Sauce (adult-only heat drizzle — ~15 cal / 1g fat per tbsp)
Refresh addition — the adult-only heat lever. Filmed as the light sauce drizzle over the finished adult bowl. Never on the kid plate. Sub any habanero-based hot sauce (Lucky Dog, Cholula Chili Lime) — macro impact is negligible.
Romaine hearts + yellow cherry tomatoes
Romaine hearts + yellow cherry tomatoes
Cold produce — chopped romaine + halved yellow cherry tomatoes
Refresh produce swap from shredded iceberg + diced Roma. Refrigerated separately from the warm beef containers so texture holds until assembly. Yellow cherry tomatoes photograph brighter than Roma against the cheesy beef.
Kirkland Signature
Kirkland Signature
Organic Chicken Sipping Bone Broth (1 tbsp per meal-prep container = 6 tbsp total, ~17 cal)
Refresh reframes the bone broth as a MOISTURE HACK per meal-prep container — 1 tbsp splashed into each container so the beef stays moist through the microwave reheat. Cross-recipe across id 4, 24, 30, 38, 39, 41, 42.
