Carnitas Taco Plate
Del Real tray seared frozen, fat drained, broth-braised under a glass lid = real carnitas texture in 8 active minutes. The kid compartment tray IS the brand thesis — parent picks what's available, kid picks the assembly order.
Taco night, kids are hangry, you have 15 minutes. One Del Real tray + corn tortillas + Wholly guac minis. Adults plate with onions + Lucky Dog; kids get a compartment tray with separate components (no heat, no onions). Assemble at the table.

Method
AT THE PLATE FORMAT. Same carnitas + same tortillas + same Wholly guac for everyone. Adults get a white plate with a small bowl of meat + 3 ramekins of toppings (assemble at the table). Kids get a compartment tray with the same meat + Wholly mini + tortilla stack in separate compartments (assemble at the table). The split lever is the TRAY vs PLATE + the toppings filter (onions + hot sauce on adults only).
2 adult plates (5 oz carnitas + 3-4 tortillas + 1 guac mini + onions + hot sauce) / 2 kid trays (2.5 oz carnitas + 2-3 tortillas + 1 guac mini, no onions, no hot sauce). 1 Del Real tray = 4 total servings.
Shared base
Cook once — this part works for everyone.
- 1MISE
Open Del Real tray, Wholly Guacamole minis on counter (1 per plate), Mission tortilla bag open, bone broth pouch ready, Mezzetta jar + Lucky Dog bottle out for adults.
- 2SEAR PHASE
Stainless skillet over medium-high. Drop the Del Real carnitas straight from the tray into the dry hot pan (frozen blocks, not thawed). 2 min undisturbed for contact-sear on the bottom.
- 3DRAIN FAT
Tip the pan, spoon out 2-3 tbsp of rendered fat into a heat-safe bowl. Discard (or save for cooking rice later). This is the calorie lever — skip it and the dish gains 80 cal/serving.
- 4SHRED + BRAISE
Tongs shred the meat into medium pieces (not fine). Pour in 1/4 cup Kirkland Sipping Bone Broth. Glass lid on. 2-3 min until the broth mostly evaporates — visible steam stops escaping the lid edge.
- 5DRY THE SURFACE
Lid off, 60 sec on medium. Stir once. Meat should look glossy-moist, not wet-pooled. Off heat.
- 6WARM TORTILLAS
Dry skillet over medium. Stack of corn tortillas, 30 sec/side. Stack them under a clean towel as they come off to hold warm. Don't pre-warm more than 5 min ahead.
Adult — White Plate + Onions + Lucky Dog
- 7ADULT PLATE
White dinner plate. Small bowl in the center — scoop 5 oz of the shredded carnitas. Ramekin alongside with the squeezed-in Wholly Guacamole mini. Deli cup with 1-2 tbsp pickled onions (let the brine show). Stack 3-4 warm tortillas next to the plate. Lucky Dog bottle on the side.
- 8ASSEMBLE AT THE TABLE
One tortilla at a time. Carnitas first, guac smear, pickled onions on top, hot sauce dashes. Eat over the plate (corn tortillas drip). Repeat. 3-4 tacos per plate.
Kid — Compartment Tray (Build-Your-Own, No Heat)
- 7KID TRAY
Compartment tray on the table. Large compartment: 2-3 warm tortillas stacked. Small compartment 1: 2.5 oz shredded carnitas. Small compartment 2: squeezed-in Wholly Guacamole mini. Hand the kid the tray + a small spoon for scooping guac.
- 8ASSEMBLY (kid leads)
Most kids pick up a tortilla first, then ask 'meat or guac?' Let them choose. Some will spoon guac directly off the tray and eat it like dip with tortilla as the dipper. Either works — the components are the same calories.
Adult plate | Kid plate
2 adult plates (5 oz carnitas + 3-4 tortillas + 1 guac mini + onions + hot sauce) / 2 kid trays (2.5 oz carnitas + 2-3 tortillas + 1 guac mini, no onions, no hot sauce). 1 Del Real tray = 4 total servings.
Adult — White Plate + Onions + Lucky Dog
What makes it different
- 2-4 tbsp Mezzetta Pickled Red Onions (1-2 tbsp per plate, in a small deli cup or ramekin)
- Lucky Dog Hot Sauce, to taste (a few dashes per taco)
- 1 white dinner plate per adult
- 1 small bowl/ramekin for the carnitas
- 1 ramekin for the Wholly Guacamole mini (squeezed in)
- 1 small deli cup for the pickled onions
- Stack of 3-4 warm Mission Yellow Corn Tortillas
Kid — Compartment Tray (Build-Your-Own, No Heat)
What makes it different
- 1 compartment kid tray per child (3-4 compartments, like an EZPZ Happy Mat or similar)
- Large compartment: stack of 2-3 warm Mission Yellow Corn Tortillas
- Small compartment: 2.5 oz shredded carnitas
- Small compartment: 1 Wholly Guacamole Classic Mini (squeezed in)
- (NO pickled onions, NO hot sauce)
Three keys to success
- 1TWO PHASES: SEAR (fat drain) → BRAISE (broth + lid). The Del Real tray is fully cooked but needs both phases to read as real carnitas instead of heat-and-eat. Sear renders + crisps edges; braise re-hydrates the shred. Skip either and the meat is wrong.
- 2DROP FROZEN, NOT THAWED. The tray meat goes straight from package into a hot stainless skillet (medium-high). Frozen-block contact gives the bottom 90 sec of contact-sear before the center thaws — that's where the crispy-edge texture comes from.
- 3DRAIN FAT AFTER 2 MIN. Tip the skillet, spoon out 2-3 tbsp of rendered fat into a heat-safe bowl (discard or save for cooking rice later). Otherwise the dish lands at 700+ cal/serving.

Storage and nutrition
Storage: Best fresh — assembly format doesn't reheat well. If you have leftover braised carnitas (rare with this batch math), store in an airtight container with the residual broth. Tortillas store sealed in the original bag at room temp 3-4 days.
Reheat: Carnitas: microwave 60 sec covered + 1 tbsp bone broth splash, stir, 30 sec more. Or skillet over medium 2-3 min. Tortillas: skillet 30 sec/side (microwave cracks them). Don't pre-assemble + store — the tortillas go soggy on contact with the meat.
Lasts: Cooked carnitas leftover holds 3 days in the fridge, freezes 2 months. Tortillas: sealed bag at room temp 3-4 days. Wholly minis: per the package date (usually 5-7 days from opening). Pickled onions: per Mezzetta jar (months). The dish is built for fresh assembly — don't meal-prep this one.
