Chicken Alfredo Crunch Nests
Crisp hash-brown shells, thick cottage-cheese Alfredo with Costco chipotle chicken, and a Parmesan-mozzarella lid that actually cracks.
You want a hands-on split-plate dinner that batches for two family nights, delivers real crunch (crisp shells + brittle cheese lid), and rides the Alfredo flavor everyone already asks for.

Ingredients
HASH-BROWN SHELLS
CHICKEN ALFREDO FILLING
CHEESE CRISP LIDS
LEMON BROCCOLI (per dinner)
ADULT FINISH (per plate)
KID FINISH (creator's build, per plate)
Method
AT PLATING. Nests are identical; the split lives only in nest count per plate and whether Alfredo dip goes on the kid side.
12 nests from one 12-cup muffin pan + one 20 oz broccoli sheet + one Alfredo pot. Adult finish: 2 nests + lemon broccoli. Kid finish (creator's build): 1 nest + broccoli + Alfredo dip, appetite-based.
Shared base
Cook once — this part works for everyone.
- 1HEAT + PREP
Oven 415 F, racks upper + lower thirds. Brush all 12 muffin cups with 1-2 tsp avocado oil.
- 2BAKE LIDS
Mix Parm + mozz on parchment, divide into 12 loose 2 1/4-inch rounds. Bake 5-7 min until bubbling + deeply golden. Cool completely so they turn brittle.
- 3SHELL MIX
Squeeze thawed hash browns very dry in a clean towel. Combine with egg whites + Parm + cornstarch + oil + garlic + salt + pepper.
- 4PRESS SHELLS
About 35g per cup. Thin across bottom + up shallow sides, visible rim.
- 5ROAST SHELLS + BROCCOLI
20 oz broccoli tossed with oil + garlic + salt on a sheet pan next to the muffin pan. Rotate + swap racks at 12 min. Broccoli 18-22 min, shells 18-23 min.
- 6ALFREDO
Blend cottage cheese + milk + Parm + cornstarch + spices until mostly smooth. Warm over medium-low, stirring, until steaming + thick. Fold in chopped chipotle chicken. Do not boil.
- 7FILL + BAKE
Oven to 390 F. Spoon ~50g (level 1/4 cup) warm filling into each shell, rim exposed. Bake 6-8 min to 165 F.
- 8REST + REVEAL
Rest 4 min. Loosen with a silicone/wooden utensil. Add cooled lids only at the table.
Adult — 2 Nests + Lemon Broccoli
- 9PLATE THE ADULT
2 nests + one-fourth of the broccoli. Finish broccoli with lemon.
- 10ADD LIDS LAST
Set cooled cheese lids on each nest at the table so they stay brittle.
Kid — 1 Nest + Broccoli + Alfredo Dip (Creator's Build)
- 9KID TRAY
1 nest + broccoli in a separate compartment + small dish of Alfredo for dipping.
- 10ALFREDO DIP OPTIONAL
Rao's Alfredo warmed slightly. Not included in adult macros.

Macros not published for this plate — portion it to their appetite.
What makes it different
- 1 finished nest with crisp lid
- Broccoli portion (appetite-based)
- Small dish of prepared Alfredo sauce (creator used Rao's) — for dipping
Three keys to success
- 1SQUEEZE THE HASH BROWNS VERY DRY. Fully thawed, wrung out in a clean towel until the mound holds together and the towel is wet. Wet potato = no crisp.
- 2EGG WHITES ONLY. Not whole eggs. Fat softens the shell.
- 3ABOUT 35 G SHELL MIX PER CUP. Thin across the bottom, up the shallow sides, leaving a visible rim.

Storage and nutrition
Storage: Fill only 6 nests on night one. Refrigerate the remaining baked shells, filling, and cheese lids separately for up to 3 days.
Reheat: Re-crisp shells at 400 F for ~5 min. Warm the filling, then fill and bake at 390 F for 6-8 min to 165 F. Roast the second 20 oz broccoli fresh. Add lids only at the table.
Lasts: 3 days refrigerated for baked shells and filling. Cheese lids keep 3 days in an airtight container at room temperature — do not refrigerate.
