Method
- 1BAKE THE MEATBALLS
Heat oven to 425°F. Mix meatball ingredients gently and roll 30 balls. Bake 10-13 min until 160°F. Set aside. (Or use pre-baked from the fridge/freezer.)
- 2PREHEAT THE SKILLET
Raise oven to 450°F and preheat a 12-inch cast-iron skillet for 10 minutes.
- 3BLEND THE PUFF
Blend 4 eggs + 1/2 cup egg whites + 1/2 cup cottage cheese + 1/2 cup 2% milk + 110 g flour + 1/4 cup Parm + 1/2 tsp garlic powder + salt + pepper until completely smooth.
- 4PUFF BAKE
Add 1 tbsp avocado oil to the hot skillet, pour in the batter, and bake 15-19 min. DO NOT open the oven for the first 14 min or the puff collapses.
- 5TOP + BROIL
Top the baked puff with warmed marinara, 30 meatballs, mozzarella, and Parmesan. Broil 2-3 min until the cheese bubbles.
- 6FINISH + WEDGE
Torn basil or parsley + optional Calabrian chile for adults. Cut into 6 wedges. Serve 1 wedge + 5 meatballs per adult plate; half wedges + 2-3 meatballs for kids.
