Split-Protein Creamy Spinach Pasta

One pasta, two proteins, and no second dinner to cook. The spinach + cottage-cheese sauce batches enough for six family dinners, kids get their favorite bite-sized meatballs with a little Alfredo, and adults get seared tri-tip. Adult plate ~460 cal / 38g protein.

Make this when

The family can share the same pasta but the adults want steak and the kids prefer their familiar bite-sized meatballs — and you want the sauce to batch-prep six future dinners.

Method

Split point

The pasta is SHARED. Only the finished protein changes at plating — tri-tip for adults, bite-sized meatballs with a little Alfredo for kids.

50% Adult / 50% Kid (2 adults + 2 kids share the same pasta)

Shared base

Cook once — this part works for everyone.

  1. 1
    BLANCH SPINACH

Bring a pot of water to a boil. Add the 9 oz bag of spinach and blanch briefly, just until fully wilted.

  2. 2
    ICE BATH + SQUEEZE

Immediately transfer spinach to ice water to stop the cooking. Drain thoroughly and squeeze out excess water — residual water thins the sauce.

  3. 3
    ADD TO BLENDER

Add three low-fat cottage-cheese cups, 1/2 cup ultra-filtered milk, and 1/2 cup bone broth to a blender. Add the cooled, well-drained spinach.

  4. 4
    BLEND SMOOTH

Blend until completely smooth and pale green.

  5. 5
    PORTION BULK SAUCE

Set aside enough sauce to lightly coat four pasta servings. Portion the remainder into family-dinner containers — creator reports the batch covers ~6 family dinners in total.

  6. 6
    COOK + TOSS PASTA

Cook four package servings of regular pasta per the package. Drain, return to the pot, and toss with only enough green sauce to coat the pasta.

Adult — Seared Tri-Tip

  1. 7
    SEASON

Season tri-tip on all sides with preferred steak seasoning.

  2. 8
    SEAR

Heat a large skillet with a small amount of ghee, then sear the tri-tip until deeply browned on all sides.

  3. 9
    REST

Cook to preferred doneness (creator: medium-rare, ~130°F for meal-prep reheat headroom — see USDA guidance in executionRules for whole-cut minimum). Transfer to a board and rest at least 5 minutes.

  4. 10
    SLICE + CUBE

Slice thin against the grain, then cut into bite-sized cubes.

  5. 11
    PLATE

Green pasta + one tri-tip portion per adult.

Kid — Alfredo Meatballs

  1. 7
    HEAT MEATBALLS

Warm 4 oz bite-sized beef meatballs per package directions.

  2. 8
    COAT + DIVIDE

Add just enough Alfredo to lightly coat the meatballs, then divide into two 2 oz kid portions.

  3. 9
    PLATE

Same green pasta + 2 oz Alfredo-coated meatballs per kid. Kid macros intentionally hidden — the creator didn't measure the pasta/Alfredo/meatball combination against exact labels.

What makes it different

  • 1 lb tri-tip (divides into 4 portions — 2 now, 2 for next adult meal)
  • preferred steak seasoning, to taste
  • ghee or another high-heat cooking fat, as needed
Kid plate

Kid — Alfredo Meatballs

Macros not published for this plate — portion it to their appetite.

What makes it different

  • 4 oz fully cooked bite-sized beef meatballs (2 oz per kid)
  • prepared Alfredo sauce, enough to lightly coat (do NOT pool)

4 oz total bite-sized cooked beef meatballs (2 oz per kid). Creator uses Earth's Best mini beef meatballs.

Three keys to success

  1. 1Blanch spinach ONLY until wilted, then move immediately to an ice bath. Overcooking dulls the color and loses the fresh chlorophyll top-note.
  2. 2Squeeze the cooled spinach thoroughly before blending — residual water thins the sauce and blows out the creamy body.
  3. 3Season and sear the tri-tip on high heat; rest before slicing. Slice thin AGAINST the grain, then cube. Creator prefers medium-rare because meal-prep portions reheat later — subject to USDA guidance below.

Storage and nutrition

Storage: Cool and refrigerate the pasta, tri-tip, meatballs, and green sauce in SEPARATE airtight containers within 2 hours. Portion extra green sauce in family-dinner containers and freeze what won't be used within 3-4 days.

Reheat: Warm the pasta gently with a small splash of milk or broth if needed. Air-fry or quickly sear the tri-tip separately until it reaches serving temperature — do not reheat with the pasta or the pasta will overcook while the meat warms. Reheat meatballs separately per their package.

Lasts: Cooked pasta, meat, and refrigerated sauce: use within 3-4 days. Frozen family-dinner sauce portions: thaw overnight in the refrigerator before reheating.
