Method
STOP. All tacos are cooked. Plate differently — adults get Caesar + Quest crunch, kids get simple tacos + sides.

Shared base
Cook once — this part works for everyone.
- 1MIX
Combine ground chicken, Velveeta shreds, salt, and taco seasoning. Don't overwork — keep it loose.
- 2SMASH
Divide the mixture evenly across all 12 tortillas and spread it thin to the edges — this is critical.
- 3COOK
Chicken side down on a medium-hot griddle, 4-5 min until browned and the chicken reaches 165°F. Flip and toast the tortilla side 1-2 min.
Adult — Caesar Crunch (Keto)
- 4SALAD
Toss 2 cups romaine with 2 tbsp of the homemade high-protein Caesar (recipe on /cookbook/high-protein-caesar-dressing), split across the two adult plates.
- 5BUILD
Plate 4 keto tacos per adult with the dressed romaine and half a bag of Quest chips.
Kid — Classic Tacos + Sides
- 4PLATE
Keep the tacos plain. Chips and salad on the side.

50% Adult / 50% Kid
Adult — Caesar Crunch (Keto)
What makes it different
- 4 La Banderita Carb Counter keto street tacos (from the shared cook)
- 1 cup chopped romaine tossed with 1 tbsp homemade high-protein Caesar
- 1/2 bag Quest protein chips
Kid — Classic Tacos + Sides
What makes it different
- 2 Mission flour street tacos (from the shared cook), plain
- Chips on the side (amount to preference)
- Salad on the side (optional)
Three keys to success
- 1Spread chicken THIN and evenly to the edges — thick = raw center, bad texture.
- 2Chicken side down first — always. If you flip too early, it breaks apart.
- 3Keep the taco seasoning subtle — this is a Caesar taco, not a taco-taco.

Storage and nutrition
Storage: Store cooked tacos flat in a container. Dressing and salad separate.
Reheat: Air fryer 350°F 2-3 min to re-crisp. Don't microwave — kills the crunch.
Lasts: 2-3 days. Best fresh.
